The grapes for this 2011 Reserve Syrah come from the Red Mountain AVA. It opens with notes of blackberry and dark cherry, followed by hints of lavender and cocoa. The elegant tannin structure offers supple texture and longevity. Enjoy with roast pork accompanied by fresh fig skewers or grilled meats of all kinds.
Approximately 50% of the grapes were de-stemmed before fermentation and the rest were whole cluster fermented in 1 ton fermenters. After fermentation, the must was drained of free run juice and the skins were lightly pressed. The wine continued its alcoholic fermentation in neutral French oak until it was dry and then proceeded through Malolactic conversion prior to being racked and returned to barrel. It was left to mature undisturbed for 18 months before being blended and bottled.
